Ingredients:
6 hard-boiled eggs, sliced in half length-wise, whites only
6 slices of Turkey Bacon, sliced in half
1/2 ripe avocado
(100g)
2 tbsp. nonfat plain
Greek yogurt
1 tbsp. chopped pickle
relish
3 tbsp. celery, finely
chopped
1 tsp. apple cider
vinegar
1 TB Dijon mustard
1/2 packet stevia
pinch salt and
pepper, to taste
dash paprika for
topping (optional)
How to Prepare:
1. Slice the hard-boiled eggs in half length-wise and remove
the yolks. Set aside.
2. Put the avocado,
yogurt, relish, celery, vinegar, mustard, stevia, salt, and pepper into a
mixing bowl and mash together with a fork until the mixture is smooth.
3. Scoop the mixture
with a small spoon and divide evenly into each of the egg white halves.
Sprinkle with paprika and place 1/2 a slice of turkey bacon on top. You may chill the eggs for at least a half hour to set
or serve immediately, whichever your preference is. Enjoy!
